Dairy products
Milk was a valuable source of protein for people who could not afford meat, mostly coming from cows, but also from goats and sheep. Some people thought medieval food was strange because of unusual flavor combinations and heavy use of spices, but this doesn’t mean the food was bad. Fresh meat was available to those who could afford it, and preservation methods, though simple, worked well.
Cookbooks from the Middle Ages, like the Liber de Coquina from near Naples and others from Assisi and Châlons-sur-Marne, give us clues about what people ate. These books weren’t like today’s cookbooks; they were more for rich, literate families. Recipes were often short without exact amounts or times, because most cooks learned by working in kitchens from a young age. Over 70 such recipe collections exist today in different European languages.
