What is Yogurt?
Yogurt is a tasty and healthy food made from milk. Special tiny living things called bacteria are mixed with milk and left to change. This makes the milk thicker and gives it a tangy flavor. Most yogurt comes from cow’s milk, but you can also make it from the milk of water buffalo, goats, ewes, mares, camels, and yaks.
Where Does Yogurt Come From?
People might have first found yogurt by accident when milk mixed with bacteria. It was probably discovered first by people in Central Asia and Mesopotamia around 5000 BC. In ancient Greece, people made a type of yogurt called oxygala. Later, Turks also used yogurt. For many years, yogurt was a common food for people in places like the Russian Empire, South Eastern Europe, and the Indian subcontinent.

Yogurt can be sweetened and flavored with fruits or other ingredients. Popular flavors include vanilla, honey, and toffee, as well as various fruits. Some yogurts are strained to make them thicker, like Greek yogurt. There are also yogurt drinks like Lassi from India and Ayran from Turkey.
How is Yogurt Made?
Yogurt is made by heating milk to a warm temperature and then adding special bacteria. The milk is kept warm for several hours to let the yogurt form. Sometimes, milk with more solids is used to make the yogurt firmer. After the yogurt is made, it can be strained to make it thicker by removing some of the liquid.
